Tanduay Cocktail Culture: Siargao Sunrise
Standing on its own, or accompanying a dish, the perfect cocktail is versatile and a welcome addition to any food trip. GRID x Tanduay: Cocktail Culture is a series following mixologist Dondz Bolante around the Philippines as he crafts cocktails inspired by the flavors of the different regions.
For this latest creation, mixologist Dondz Bolante takes us to the archipelago’s surfing mecca–Siargao. The refreshing zest of pomelo and lemon with a kick of red chili will keep you stoked and thirsty for the tropical flavors of island life–quite like the beckoning swells, coaxing you to “just drop in.”
1 Pomelo wedge muddled
15 ml lemon juice
20 ml simple syrup
A sliver of red chilli (muddled)
60 ml Tanduay Asian Rum
How To Mix:
Combine all ingredients with ice into a shaker tin. Shake, then serve in a tall glass. Salt half of the glass rim. Stir and garnish with a piece of Sili. Pair with Hopya.
